Pasta, Garlic, Olive Oil, and Cheese

That’s pretty much all it takes for a tasty meal. This dish is so quick to prepare, I completely forgot to take photographs.

Put water on to boil for the pasta while getting the ingredients ready, set the table and call everyone to dinner!

Spaghetti with Garlic Sauce

  • 1 lb spaghetti
  • Kosher salt
  • olive oil
  • 4-6 garlic cloves, sliced
  • red pepper flakes
  • 1/2 cup grated cheese, such as Parmesan or Grane Padano (Asiago would be delicious too)
  • handful parsley, chopped
  • butter

Bring water to a boil in a large pot with a good amount of salt. Add spaghetti and cook for a minute or two less than package instructions, it should be just shy of al dente. Drain, conserving 1-1 1/2 cup of the cooking liquid.

While the pasta is cooking, heat olive oil and garlic over low heat and sauté for about 5 minutes until fragrant.

Add just over a cup of the pasta water and let simmer with red pepper flakes to taste (we adjust at the table as we all have different tolerance for heat).

Pour the spaghetti into the sauce and toss well with the cheese. Throw in the parsley and a good knob of butter, mix well and serve.
