Fall is in the air (the rain is coming) and apples abound at the market. It’s the perfect time to make my Mamma’s apple cake. Most of my cooking chops come from my Dad, but my Mom was no slouch in the kitchen — she just didn’t get as much pleasure out of it as I do (or was as obsessed; her creativity showed in so many other ways). Fall is also the time I remember her a bit more often as it was when she passed now more than 20 years ago.

I’ve tasted many apple cakes and made various versions, yet this is the one I come back to. Not only because it reminds me of my Mom, but because it is so satisfyingly tasty. It’s also fairly quick and easy to put together and it makes your house smell divine.

Your basic baking ingredients butter, sugar, and eggs.

Whisk the eggs and the sugar. Really whisk the eggs. Much longer than you’d expect, then a bit more. 

Butter the pan while you wait:

Use your hands to spread the butter evenly around the pan and along the edges. They’ll help soften the butter too.

 

Peel, core, and slice the apples while the eggs are still whisking, then add the rest of the ingredients to the batter.

Pour the batter into your nicely buttered pan and arrange the sliced apples on top. Dust with a generous amount of ground cinnamon and sprinkle over pearl sugar before baking in a 375F oven for about 30-40 minutes, until a cake tester or one of your spare knitting needles comes out clean. Cool on wire rack, then dig in.

Serve as is with a cup of tea by the fireside, a dollop of freshly whipped cream, some nice vanilla ice cream, or cold the next morning for breakfast — if there’s anything left. Bon appétit!

  1. 4 large eggs

  3. 150g unsalted butter, melted
  4. 160g all purpose flour
  5. 2 teaspoons baking powder
  6. 1 teaspoon vanilla
  7. 3-4 apples
