Gifts from the Kitchen: Mexican Spice Mix

This is likely not authentic Mexican, but it is delicious. A spice blend that will kick your meat up a notch for sure.
Add 2-3 T to 1 lb of browned ground beef, simmer for 5 minutes with about a cup of water. Wrap some up with vegetables, sour cream, and cheese.

It also works as a marinade; slice boneless and skinless chicken breasts and/or thighs, sprinkle with a few dashes of the spice blend and mix well, then add a spoonful of sour cream. Let settle for half an hour or so. Saute sliced onion in some olive oil, add the chicken and cook until done.
Here’s my 12-year old’s creation ready to be rolled up and eaten.
Mexican Spice Mix
- 6 t dried oregano, Mexican if you can find it
- 4 t crushed red pepper flakes
- 5 t garlic powder
- 4 t black pepper
- 1-2 t cayenne pepper
- 4 T cumin
- 4 T chili powder
- 4 T sea salt
- 4 T paprika (not the sweet kind)
Mix all together, keep airtight out of direct sunlight.
You can add more cayenne for a hotter version.
