On Wednesday evenings my kitchen becomes a classroom, although it looks much the same, only with the addition of an extra cutting board on the counter and the arrival of a young fellow named Davis.

Davis is 14, he’s homeschooled and loves to cook. Thing is, his body doesn’t always agree with what he’s eating, so we’re shaking things up a bit. Keeping cooking — and eating — fun and enjoyable with dietary restrictions brought on by insulin resistance and a metabolic disease is no small feat. It’s a big challenge, even more so for a teenager.

Yet Davis keeps his spirits up and we’re both learning new stuff exploring in the kitchen.

We’ve made taco salad (and spice mix) and hot chocolate, various soups, two kinds of roast chicken, big batches of tapenade, and we’re doing some serious experimenting with stone age bread and sweet loaf (without anything sweet).

    This all looks great, especially the hot chocolate and stuffed peppers! And I love your approach to focusing on what is possible, not on the restrictions.
